Venison Back Strap Recipe #1
soak back strap in red wine, preferably organic, overnight or for two nights. cook bacon pieces until crispy, leave bacon fat behind in pan and add chopped onions, cook until brown. cut back strap into medallions and place in pan, cook on medium for a few minutes per side, you don't want them to be tough! cook until slightly pink inside. serve medallions over rice, add bacon and onions over top. put red wine in pan and reduce, then pour over venison and rice. enjoy!

marinate meat in red wine for a night or two, put in crockpot with the wine and a cup of beef stock. add onions, garlic, and mushrooms and cook on low for about 6-8 hours. serve with winter squash.
